Winters are generally crisp, bright and dry, and can dip well below zero, with the occasional fog floating up from the Saone valley. Spring and autumn seasons have cool evenings but generally pleasantly warm sunny days of up to 25C, with the possibility of a mid season frost in late October or March, and less frequently in April.
Some producers opt for also producing a Beaujolais Nouveau, which is precocious wine, extra light with a short maturation period, which comes on to the market at midnight on the third Thursday in November, to be drunk during the closing months of the year. These wines are the most complex of the Beaujolais region and generally contain more tannins which gives them a longer maturation period of around five years in which to develop depth and a broader array of rich flavours and aromas.

Crus range in style, from lighter-bodied and younger-drinking to fuller, age-worthy wines. Beaujolais Nouveau is a separate category of Beaujolais and Beaujolais Villages wines that are released shortly after harvest. The light, fruity style became popular in the s and is designed to be consumed shortly after bottling. Beaujolais is a light-bodied red wine, with high acidity and low tannins. The wine has red berry flavors, including raspberry, red cherry, red currant, and cranberries. High-quality cru Beaujolais is occasionally compared to Old World Pinot Noir, with mushroom, forest floor, and smoky notes.
This provides a relatively warm growing season, making it ideal for generating the ripe, fruit-driven flavors which characterize particular nouveau-style wines. The northern part of Beaujolais is made up of rolling granite hills with patches of clay and limestone, while the south is dominated by richer clay- and sandstone-based soils, and much flatter topography.
This differing terroir is a dominant factor in the north, producing typically aromatic, structured and complex wines in contrast to the lighter, younger-drinking and fruitier style of the south.
The Gamay grape used to produce these distinctive wines is an early ripening, acidic variety.
